dinner schedule!

I have to start grocery shopping less than EVERY single week SO I sat down today and made our dinner schedule for the next TWO weeks instead of one.

Some of these are subject to change because I know we have plans on one or two of these days... but here goes:

THURSDAY: Taco Night.. because even though I love to cook, I like having a break one night a week ;] And it's so much easier to just made tacos after spending a couple hours at the grocery store with a toddler.

FRIDAY:

Divine Pasta Casserole

SATURDAY: We're celebrating my oldest nephew's 18th birthday!!! His birthday is actually TODAY but Saturday we're cooking a big dinner for the whole family. :]
April is making a Coca-Cola ham [yummmm] & peas & rice. I'm making Baked Mac & cheese, and my yummy mashed potatoes ;]. And Mama is making Banana Pudding! And I'm sure we'll make a big salad too.

SUNDAY:

Once again!!!
Told yall it was the new favorite. ;]

MONDAY:

Chicken Stroganoff

TUESDAY:

Chinese Beef & Peppers

WEDNESDAY:

BLT Salad with Buttermilk Dressing
I've made this one before too but this time I'm going to use Clista's recipe for the croutons! :D

THURSDAY:

Red Pepper Egg-in-a-Hole
This looks fun! Breakfast for dinner with a twist!

FRIDAY: Mama Hudak's Tortellini Soup!! :D It won't be as good as hers I'm sure.. but I'm not willing to wait until December. haha ;]

SATURDAY: Chilaquiles again! And this time I won't almost set my house on fire.. hopefully. They were so delicious though.. I didn't even have to season them AT ALL. They were perfect!

SUNDAY: Million Dollar Spaghetti.. I'll have to post the recipe for this because everyone should be able to eat it. Freaking amazing. It's a recipe we got from our wonderful friend, Ursula. :]

MONDAY:

Chicken & Avocado Soup

TUESDAY: Taco Night! ha!

WEDNESDAY:

Turkey & Black Bean Enchiladas

Tomorrow is the annual Greene Family Reunion. :] Bailey can't go because he has to work so that sucks.. but Maddox & I will be there! And this is the first year that I will be actually bringing a dish. Eep!

I've never made either dish so I'm nervous but I'm also like WHATEVER if people don't like it. lol.

Also, I've been planning out dinner for every night a week ahead of time.
Soooooo this is what's on the menu for the upcoming week.

Saturday: I actually have no idea because I've been consumed with reunion cooking for that day. lol.

Sunday:

mmmmmmm beef stew.. April's recipe.

Monday:

Grilled Chicken Pasta in a Creamy Tomato Sauce
I just made this the other night but it was SO DELICIOUS and such a hit at my house & next door that we're making it again already. ha!

Tuesday:

Egg Salad
Simple enough.. I've never actually made it though so.. why not?

Wednesday:

Lemon Pasta with Zucchini & Feta

Thursday:

Chilaquiles

And that's all I've got so far. haha. I'm excited though! :D

SOMETHING happened to me recently and out of nowhere, I have fallen in LOVE with cooking. This is strange because I have always hated to cook. My mom is an amazing cook and since everything she made was always delicious... I never even bothered to learn how to do it on my own. Sucked for me when I moved out. I ate like crap for years & then I met Bailey who is also a great cook. SCORE. He gets a little overly excited with pepper sometimes but he's still really really good in the kitchen. When I was pregnant he cooked for me nonstop. I got so spoiled. So anyway, NOW I CAN COOK! And all of a sudden I LOVE IT. I know Bailey is stoked... 4 years later. LOL

I'm obsessed with food / recipe blogs. Especially foodgawker.
